This is our family’s go-to healthy banana muffins. Based on a recipe by JSHealth. We make a big batch each week and keep them in the fridge for the perfect afternoon tea snack or breaky on the run (if Brad hasn’t eaten them all already 🤦🏼♀️)
Ingredients:
2 cups almond meal
2 tsp baking soda
2 Tbsp cinnamon
2-3 ripe banana
1 cup dates pitted & chopped
3 eggs
1/4 cup melted coconut oil
3/4 cup chopped walnuts (optional)
Method:
- Preheat oven 180 degrees
- In a large bowl combine almond meal, baking soda and cinnamon
- Blend dates, banana, eggs and oil
- Add wet ingredients to dry and mix in large bowl
- Fold in nuts (if using)
- Spoon mixture into lined muffin tins
- Bake for ~25mins
