These waffles make a the perfect meal or snack (plus we're sneaking in some veg for those picky eaters!
Ingredients:
- 2 medium potatoes, peeled & mashed
- 1 cup broccoli florets, steamed & mashed
- 1/2 cup grated cheese
- 2 eggs
- 1/4 cup all-purpose flour (I used gluten free)
-1 tsp baking powder
Recipe:
1. Peel and boil the potatoes until soft. Transfer the boiled potatoes to a bowl and mash until smooth.
2. Steam the broccoli florets until soft enough to mash.
3. In a large bowl, combine the mashed potatoes, steamed mashed broccoli, and grated cheese.
4. In a separate bowl, whisk the eggs, then add them to the vegetable mixture.
5. Add the flour and baking powder, mix until well combined.
6. Preheat your mini waffle iron and lightly grease it with a bit of oil or non-stick spray.
7. Scoop a portion of the mixture into the preheated waffle iron, spreading it out evenly.
8. Close the waffle iron and cook until the waffles are golden brown and crispy. This usually takes about 3-5 minutes, depending on your waffle iron.
9. Allow the waffles to cool slightly before serving.
Freezing Instructions:
1. Let the waffles cool completely.
2. Place the waffles on a baking sheet in a single layer and freeze until solid.
3. Transfer the frozen waffles to a freezer-safe bag or container.
4. To reheat, simply pop the frozen waffles into a toaster or airfryer until heated through and crispy.
