Prep the Dates:
In a Catchy silicone plate, add the chopped dates, bicarb soda, and water. Microwave on high for 40 seconds to soften the dates. Once done, mash with a fork until you have a smooth paste. -
Mix the Pudding:
Add the baking powder, cinnamon, oats, almond meal, and milk to the mashed dates. Stir everything together until well combined, then smooth down the top of the mixture with your spoon. -
Microwave:
Pop the plate back in the microwave and cook on high for 2 minutes. The pudding should rise slightly and be firm to the touch. -
Make the Sauce:
While the pudding is cooking, add the almond butter, maple syrup, and milk to a small jar. Screw on the lid and shake well until the sauce is smooth and emulsified. -
Serve:
Pour the warm almond sauce over the sticky date pudding and serve immediately. It’s best enjoyed warm and gooey!
Tips:
- Use rolled oats for more texture or quick oats for a softer pudding.
- Substitute almond meal with oat flour or regular flour if preferred.
- For younger babies, ensure the dates are well mashed and that the texture is soft enough to be safely eaten.
